These days, less is more (although I have a fondness for them and use them all the time). In the sentence example you gave, since the clauses are short and one of them is dependent on the other, you don't need the comma. I don't consider wishing "Merry Christmas" to a non-Christian to be a disrespectful act, nor would I consider being wished a Happy Hanukkah as a non-Jew a sign of disrespect, etc. If the recipient does, then I'm at a loss. All I can say is that I can't surround myself with people that need tip-toeing around. Life is too short to find offense in others' joy. I understand, and appreciate your POV.
